Handpicked
Before sorting, foxnuts from phodis (farmers who process foxnuts) come with mixed grades including Pressed Hard Black Shells, Yellowish/Reddish variations, and Small sizes (less than 10 MM).
The handpicking process involves the separation of all unwanted grades. As a result, the Handpicked grade consists of 99% round foxnuts with a uniform size.
Non - Handpicked
Non-Handpicked” implies that 7-10% of all the mixed grades will remain present.
Makhana Making Process
- Cleaning & Washing (Raw Seeds)
- Sun Drying and Storage of Seeds (2-3 Hours)
- Size Grading (Sun-dried seeds are sorted into 7-9 grades)
- Pre-heating (Seeds are heated in earthen pitchers or cast-iron pans at temperatures of 250°C – 500°C, reducing moisture content by up to 20%)
- Tempering (Preheated seeds are stored for 24-48 hours under ambient conditions)
- Roasting and Popping (Preheated seeds are roasted in a cast iron pan at 500-700°C. Upon cracking sounds, the seeds are placed on a hard surface. Sudden impact force breaks the hard shell, causing the kernel to pop out in an expanded form, resulting in popped Makhana or lava)
- Polishing (Rubbing Makhana pops against each other in bamboo baskets or jute bags imparts whiteness and luster)
- Grading (Popped Makhana is classified into two grades: Lava and Thurri. Lava sizes are graded as 4+, 5+, 6+, Suta, and Handpicked. Thurri is semi-popped, hard, and reddish in color)
